Anthony Bourdain and Andy Ricker made 'Cowboy Hat Lady' famous among tourists. Fame hasn't increased prices, reduced quality, or diminished her work ethic. Every evening, her hat is donned and a cleaver is wielded.

She sells just one succulent dish: khao kha moo, slow-braised pork served over rice, with pickled mustard greens and an egg. Add your own chilies, cloves of raw garlic, and pickled mustard greens to taste.
